In this workshop, which was led by the Ecole du Goût team, the chefs from ‘Homes Pour Personnes Agées - HPPA’ were introduced to diets specifically adapted to the needs of older people. These include, for example, low-fat food and diets for diabetics. Preparations with a reduced use of salt and allergens were also part of the course. The practical approach, in which the theory learnt could be put into practice straight away, was particularly appealing to the participating chefs and resulted in some delicious dishes.
